This flavorful vegetarian and vegan stuffing has rustic bread cubes tossed in salty vegan butter, veggies, and fresh herbs like sage, rosemary, and thyme. Perfect for Thanksgiving!

Finely chop the fresh sage, rosemary, thyme and parsley.

Bake the bread cubes for 5 minutes to help dry them out.

Melt the vegan butter in a pan over medium heat.

Add the celery and onion, then cook until tender and fragrant, about 10 minutes. Stir in the herbs.

Mix the ground flaxseed with water and set aside for a few minutes to thicken.

step 6

Mix the bread, veggies, and flax egg together in a large bowl. Pour 1/2 the vegetable broth over everything.

step 7

Transfer to a baking pan and cover with more broth to moisten everything.


Bake for 40 minutes until golden brown and crisp on top. Garnish with more fresh herbs and dried cranberries.
