about the recipe

These slightly sweet, rich, yeasted vegan brioche buns are super soft, fluffy, and ultra buttery.  These buns have soft pastry-like layers and a gorgeous golden brown exterior.


activate the yeast by mixing it with warm oat milk and sugar

step 1

mix the flour, salt, and remaining sugar together

step 2

make a well in the center and add the wet ingredients

step 3

mix the wet and dry together to form a soft dough

step 4

knead the dough for 7-8 minutes

step 5

cover and let rise for 1 hour


divide the dough into 8 balls, then let them rise for 30 more minutes

shaping the dough

mix together equal parts oat milk, maple syrup and Just Egg and brush the buns

vegan egg wash

bake for 25 minutes


so fluffy, tender and golden brown!
