Soft & fudgy, these peppermint mocha cookies are the perfect holiday, winter, or Christmas cookie.  They're infused with espresso flavor and sprinkled with crushed candy canes!

vegan butter

Cream the vegan butter and sugars together in a large bowl.

Add the dry ingredients on top and mix into a thick cookie dough.

Crush the candy canes and fold into the cookie dough.

Chill the dough, then fold the marshmallows into it.

Scoop the cookie dough onto a parchment lined sheet and sprinkle more candy canes on top.

Bake, let cool, then drizzle melted white chocolate on top.
