This creamy one-pot red pesto pasta with sun-dried tomatoes, fresh basil, and zesty lemon makes a perfect spring or summer weeknight dinner that’s dairy free and vegan.

make the homemade red pesto with oil-packed sun-dried tomatoes

step 01

heat olive oil in a large pot or cast iron pan and cook the shallot

step 02

add garlic, cherry tomatoes, and deglaze with the dry white wine

step 03

add the short pasta, broth, oat milk and half the red pesto

step 04

simmer covered until the pasta is almost al dente, then add the remaining pesto and cream cheese

step 05

top with toasted pine nuts, fresh basil, more sun-dried tomatoes and crispy chickpeas!
