This creamy vegan mushroom soup is a velvety blend of hearty mushrooms & cashew cream. It's seasoned with fresh herbs for a cozy dinner.  Dairy free with a gluten free option.

step 1

Clean the mushrooms well and thinly slice them.

step 2

Cook about 1/4 of the mushrooms until golden brown. Then, set aside.

step 3

Soak the cashews in hot water to soften them while you prep the rest of the soup.

Cook the onion, garlic, and remaining mushrooms with the herbs and spices.

step 5

Add flour (or optionally plain protein powder), then deglaze with the white wine.

step 6

Blend the soaked cashews until smooth to make the thick cashew cream.

step 7

Add vegetable broth and cashew cream to the pot. Simmer to help thicken the soup.

step 7

Blend the soup until super smooth. Then, spoon into bowls & top with the reserved mushrooms
