This creamy vegan potato leek soup has a silky-smooth texture and a comforting, savory flavor. It's ready in just 30 minutes, it can be made in 1 pot and it's 100% dairy free!

Yukon Gold Potatoes

step 1

Trim and wash the leeks well to remove any grit or sand.

Heat a large pot with oil and add the onion and leeks when hot.

Cook until translucent, then add the seasonings and potatoes.

Add the vegetable broth, then simmer covered for about 15 minutes.

Once the potatoes are fork tender, add the dairy free milk and use an immersion blender to blend until smooth.

Add a pat of vegan butter and mix to combine. Taste and add more salt or pepper!
