This crowd-pleasing vegan caesar salad is packed with protein since it’s topped with vegan “chicken”.  It tastes just like the non-vegan version, and is light yet filling enough to eat for dinner on a warm summer night.


step 1

mix together the dairy free caesar dressing 

step 2

place dressing in fridge to rest

step 3

make the blackened seitan chicken

step 4

slice the seitan on the diagonal

step 5

toss the romaine with the avocado, dressing, lemon, and vegan chicken

step 6

top with salt and pepper to taste and fresh grated vegan parm
