This Indian-inspired easy coconut milk chickpea curry is made with fragrant spices like curry powder, cumin, and garam masala.

Sauté onions, ginger and garlic in a large stock pot.

Add the curry powder, cumin, and garam masala and stir for 1-2 minutes until toasted.

Add the crushed tomatoes and coconut milk. Stir to combine.

Add ingredients of choice. Then simmer for 10-15 minutes.

Serve this flavorful curry sauce with rice, cooked chickpeas, and diced potatoes.

Store any leftover sauce in an airtight container in the refrigerator for up to 3-4 days.
