This creamy vegan tomato pasta bake is a super easy, 1 skillet meal perfect for weeknights.  This is a no-boil pasta bake that’s vegetarian and vegan friendly but will please even the pickiest of eaters.


step 1

saute the onion, garlic, and bell pepper

step 2

simmer the sauce ingredients and add the dry rigatoni

step 3

mix in the vegan sausage and some of the dairy free cheese

step 4

sprinkle more cheese on top & bake covered at 350F for 15 minutes.

increase to 425F and bake for 10 more mins. 

it should be browned and bubbly when done!


top with fresh basil and serve alongside a fresh salad for a complete meal!
