This vegan pumpkin pie has a creamy spiced filling made with coconut milk.  Serve with coconut whipped cream for a perfect Thanksgiving dessert. Dairy free, eggless, and easy!

brown sugar


pumpkin puree

coconut milk

maple syrup

pumpkin spice

step 1

Make the vegan pie crust and press into the pie pan. Poke holes in the bottom.

step 2

Add pie weights or dried beans and blind bake the crust.

step 3

Remove the weights and let cool completely before filling. This helps prevent a soggy crust!

Mix together the filling ingredients in a large bowl or food processor. Then fill the crust.

Optional: cut out the excess crust to decorate the top of the pie.

step 6

Decorate the top, apply vegan egg wash and bake until set in the center.


Let cool for a few hours to set up before slicing.


Top with coconut whipped cream and a dusting of cinnamon.
