These easy vegan stuffed peppers make for a fast weeknight dinner.  The bell peppers are roasted until tender and stuffed with rice, dairy-free pimento cheese, and savory baked tofu.

vegan mayo & cheese

step 1

Add the white rice and veggie broth to a rice cooker or medium pot. Cook until tender.

step 2

Prep the bell peppers and add to an oiled baking dish. Pre-bake for 10-15 minutes.

step 3

Add the vegan mayo, vegan cheese, pimento peppers and spices to a measuring cup or bowl

step 4

Mix well to combine to make the vegan pimento cheese.

step 5

Add the dairy free pimento cheese and prepped tofu to the cooked rice.

step 6

Stuff the pre-baked peppers with the rice filling.


Bake for 10 more minutes until golden on top!
