These oatmeal raisin cookies are made with steel cut oats offering chewy edges, a nuttier flavor, & a soft, buttery interior. Only 9 ingredients, 1 bowl, dairy-free & vegan-friendly!

raisins

brown sugar

steel cut oats

cinnamon

Soak the steel cut oats in room temperature water for 30 minutes - 1 hour to help soften them.

step 2

Add the softened vegan butter and light brown sugar to a large bowl.

step 3

Cream the butter and sugar until fluffy and lighter in color.

step 4

Add the flour, baking soda, cinnamon and salt on top.

step 5

Mix together to form a soft cookie dough.

Fold in the raisins and the soaked and dried steel cut oats.

Scoop the dough onto a parchment lined baking sheet and bake at 350F for 11-13 minutes.

Let the cookies cool on the baking tray, then transfer to a wire rack.
