This One Pot Vegetable Pasta with Creamy Tomato Sauce is loaded with fresh veggies & bursting with flavor.  It's great for busy weeknights & is vegetarian, vegan & dairy free!

olive oil

tomato sauce



veggies of choice

coconut milk

step 1

Cook onions and garlic in olive oil over medium heat until translucent and fragrant.

step 2

Add your vegetables, like zucchini, mushrooms and bell peppers, and cook for 3-5 minutes.

step 3

Pour in the tomato sauce, coconut milk, veggie broth and spices.

step 4

Bring to a simmer and add the short pasta (like penne, cavatappi, or rigatoni).

step 5

Cover and cook the pasta for 5-6 minutes.

step 6

Uncover, add the asparagus and cook for 5-6 more minutes.


When the pasta is al dente, mix in dairy free cheese and fresh basil.
