These chocolate chip Protein Blondies have chewy edges & a gooey, melted, chocolate center.  They taste like a classic blondie but have extra protein to keep you fuller longer!

main ingredients

vegan butter

protein powder

baking powder


brown sugar (or sugar free alt.)

chocolate chips


whisk together the melted and cooled vegan butter and the brown sugar (or sugar alternative).

step 01

add in the flax 'egg' and whisk to combine

step 02

add the dry ingredients and protein powder on top, then mix to combine

step 03

fold in the dark chocolate chips or chunks- if the dough looks dry, add 1-2 tbsp of almond milk

step 04

pour the batter into a parchment lined baking pan and top with more chocolate!

step 05

bake at 350F for 28-35 minutes or until the edges are golden brown and pulling away from the pan


let the protein blondies cool in the pan, then slice and serve!
