These summer rolls (also called fresh spring rolls) are filled with crunchy veggies, fresh herbs, savory tofu & rice noodles.  Vegan, vegetarian & gluten free (with GF soy sauce)!

peanut sauce

rice paper wraps

peanuts

tofu

rice noodles

herbs

veggies

sauce ingredients

garlic & ginger

peanut butter

sambal oelek

soy sauce

vinegar

agave

sesame oil

step 1

Whisk together the ingredients for the peanut sauce in a bowl or measuring cup.

step 2

Slice the tofu into strips and toss with 1/4 of the sauce to marinate. Pan fry after marinating.

step 3

Soak rice noodles in hot water for 4 minutes to soften them.

step 4

Dip the rice paper wraps in warm water for 5-10 seconds until softened.

step 5

Place the wrapper on a clean work surface or cutting board.

step 6

Fill the wrapper with thinly sliced vegetables, strawberries, the cooked tofu, herbs and rice noodles.

step 7

Fold the wrapper over the filling and roll away from yourself to seal it.

serving

Top with sesame seeds and serve alongside the peanut sauce!
