These fluffy and moist sweet potato muffins are a delightful blend of cozy spices. They're topped with a crunchy pecan crumble.  Easy to make and naturally vegan!

brown sugar

almond milk

step 1

Bake the sweet potato until tender, then remove the skin.

Mash the sweet potato until smooth with a fork or potato masher.

step 3

Add the wet ingredients and sugar to the mashed sweet potato.

step 4

Mix and then add the dry ingredients on top.

step 5

Mix well to form a very thick muffin batter.

step 6

Scoop the batter into a greased muffin pan, filling the cups until just full.


Add the streusel topping and bake for 18-20 minutes at 400F.


Let cool for 2-3 minutes in the pan, then transfer to a wire rack. Enjoy warm!
