Tofu Bánh Mì

This plant-based tofu bánh mì features charred 5-spice tofu and quick pickled vegetables piled high on a crunchy toasted baguette.

step 1

Mix together the ingredients for the tofu marinade and add the tofu slices. Marinate for at least 30 minutes.

Mix together rice vinegar, sugar, lime zest and water in a jar. Add the ribboned cucumber and carrots. Place in the fridge.

step 3

Cook the tofu on medium-high heat for 3-4 minutes each side until charred.

step 4

Slice the baguette in half, toast, and spread with vegan mayo.

step 5

Add the cooked tofu and quick pickled vegetables.


Top with jalapeño slices and a handful of cilantro.
