This vegan baked feta pasta is bursting with seasonal flavors like ripe cherry tomatoes and basil.  It's complete with a creamy homemade tofu feta!

step 1

Place the tomatoes, garlic, onion and the drained block of tofu into a baking pan.

step 2

Drizzle with olive oil. Sprinkle with herbs and vegan Parmesan cheese.

Bake for 25-30 minutes, or until tomatoes have burst and are bubbling.

Once tomatoes are baked, break the tofu down and tomatoes together, then mix.

step 5

Mix in the cooked pasta until it’s well coated in the sauce.

step 6

Season to taste. Serve with fresh basil and crusty garlic bread.

A bulk of the flavor comes from the olive oil, so make sure you use one that is high quality!
