This creamy and crispy vegan baked mac and cheese is made with almond milk, vegan cheddar cheese, and a special secret ingredient you won’t know is there - sweet potato!

step 1

Roast a sweet potato until soft and tender. Remove the skins.

step 2

Blend baked sweet potato, seasonings, and half the almond milk in a blender.

step 3

Make a roux by combining flour with melted vegan butter. Then slowly whisk in the vegan cheese and remaining almond milk.

step 4

Blend this cheese sauce with the sweet potato mixture until creamy.

step 5

Cook the pasta 1-2 minutes less than the package indicates.

step 6

Add ¾ of the cheese sauce to the pasta. Stir to coat all of the noodles. Transfer to a pan.


Add the crispy cracker topping. Bake at 350F for 20 minutes until golden.


Top with the remaining sauce when ready to serve.
