These Vegan Black Bean Enchiladas are stuffed with sweet potatoes and topped with a spicy red enchilada sauce, a vegan cheese, sliced jalapeños, and fresh cilantro!

step 1

Sauté onion and garlic in a pan with olive oil for about 5 minutes.

step 2

Cook green pepper and sweet potatoes until tender. Add in the beans and taco seasoning.

step 3

Add the filling to the tortillas and arrange seam side down. Top with enchilada sauce & vegan cheese.

step 4

Bake until golden brown along the edges and the sauce appears bubbly.


Top with diced avocado, jalapeno, cilantro, and a squeeze of lime.

This recipe makes about 9-10 enchiladas. This is the perfect amount to fit in a 9×13″ pan.

You can use either corn tortillas or flour tortillas in this recipe.
