This vegan chicken parmesan has crispy herb crusted seitan chicken, a rich tomato sauce, and creamy dairy free cheese on top that becomes golden brown when baked.

Combine the vital wheat gluten and spices. Add the veggie broth, tofu and oil to the center.

Mix to combine, then gently knead to form a smooth dough.

Divide into 4 and shape into cutlets.

Simmer the seitan in vegetable broth for 15 minutes.

step 5

Bread the simmered seitan with the herb breadcrumb mixture.

step 6

Place on a baking sheet, oil, and bake for 10 minutes.


Remove from the oven, flip, add marinara sauce and vegan cheese sauce on top. Bake for another 10 minutes.

Serve over spaghetti with fresh basil and more grated vegan parmesan cheese!
