This vegan cordon bleu is made with chewy seitan chicken stuffed with savory plant-based ham slices and creamy dairy-free Swiss cheese. 


step 1

blend the wet ingredients together

step 2

mix the wet ingredients with the dry to form a moist dough

step 3

divide the dough into 4 pieces and flatten into fillets

step 4

layer on the vegan ham and cheese slices

step 5

seal the seitan shut and coat the exterior in the mayo/mustard mixture

step 6

coat in Panko breadcrumbs


pan fry then bake until golden and crispy


slice and serve with green peas or potatoes
