These vegan lemon poppy seed muffins are fluffy, moist and bursting with bright citrus flavor.  This recipe is dairy free, eggless and can be made in one bowl!

vegan butter

vegan yogurt

step 1

Using your fingers, mix the sugar with the lemon zest in a large bowl.

Add the melted vegan butter, dairy free yogurt, vanilla, and lemon juice.

Mix the wet ingredients together and add the dry ingredients on top.

step 4

Whisk the wet and dry ingredients together until mostly smooth.

Baking Tip!

Let the batter rest for 15 minutes before scooping and baking.  This gives the baking powder time to activate, forming tiny bubbles which lead to taller muffins with a fluffier texture.

Scoop the batter into a prepared muffin pan.


Sprinkle sugar on top and bake at 425F for 5 mins, then at 400F for 12-13 more mins.
