This vegan lentil stew is full of green lentils, veggies, and cozy spices simmered in a seasoned broth.  With ~ 25g of protein per bowl, this recipe makes a hearty plant-based dinner.

olive oil



vegetable broth



green lentils

soy sauce

balsamic vinegar

step 1

Heat olive oil in a large pot. Add the onions and garlic and cook for 2-3 minutes.

step 2

Add the carrots, celery and spices. Cook until slightly tender.

step 3

Add the rinsed and drained lentils, soy sauce and vegetable broth.

step 4

Bring to a simmer and cook until the lentils are tender, about 25 minutes.

step 5

Add the balsamic vinegar and lime juice and simmer uncovered for 5-10 more minutes to thicken.


Serve warm garnished with cilantro alongside crusty rustic bread!
