This incredibly easy Vegan Mascarpone Cheese is made with 3 simple ingredients that you most likely have in your fridge and pantry already!



soy milk


lemon juice

step 1

Pour the soy milk and lemon juice into a medium-sized pot and heat on low.

step 2

Bring the mixture to a very gentle simmer.

step 3

Once solids rise to the top, pour the soy milk mixture into the prepared cheesecloth.

step 4

Squeeze the cheesecloth over the sieve and bowl.

step 5

Transfer the soy curds to a food processor and add in the sugar, salt and vanilla (optional).

step 6

Blend until smooth and creamy.

You can keep the mascarpone in the fridge for up to 2 weeks.
