MUSHROOM GRAVY

This vegan mushroom  gravy has a thick, creamy texture, a beautiful golden color, and a savory, umami flavor.   Use it to top mashed potatoes! Dairy free and vegetarian friendly.

vegan butter

vegetable broth

oat milk

step 1

Wipe the mushrooms clean and finely mince into small pieces.

Melt vegan butter in a small pot over medium heat.

step 3

Add the onions, garlic, and finely minced mushrooms to the butter. Cook until tender.

step 4

Add the miso, soy sauce, and flour. Mix to coat the cooked veggies. Cook for 1-2 minutes.

step 5

Slowly whisk in the dairy free milk and simmer to thicken slightly.

step 6

Add the vegetable broth, salt, pepper and herbs. Continue to cook until thickened.

serving

Transfer to a serving container when thickened.

Pour over mashed potatoes, dinner rolls or vegan roasts!
