This vegan sweet potato casserole is silky smooth with golden brown toasted marshmallows & candied pecans on top.  It can be made ahead of time for holiday meals like Thanksgiving.

main ingredients

brown sugar

sweet potatoes

pecans & vegan marshmallows

vegan butter

cinnamon & vanilla

oat milk

step 1

Wash the sweet potatoes and bake them until tender on a parchment lined baking sheet.

step 2

Blend the sweet potatoes, oat milk, vegan butter, sugar, cinnamon and vanilla in a food processor until smooth.

step 3

Mix the pecans, brown sugar, vegan butter and cinnamon together in a small bowl.

step 4

Spread the sweet potatoes in a casserole dish and top with the candied pecans and marshmallows.

step 5

Bake for 35-40 minutes until golden brown on top.
