This vegan and vegetarian gnocchi soup is super creamy, hearty, comforting, and the perfect easy fall dinner recipe.  This Olive Garden copycat recipe is filled with lots of veggies!


step 1

saute the onion, garlic, celery, and carrots

step 2

add in potatoes, veggie broth, and the spices

step 3

simmer the potatoes until soft, then mash about 1/4 of them to thicken the soup

step 4

add in the dairy free milk and salt & pepper to taste

step 5

prepare the gnocchi according to the package instructions

step 6

add in the cooked gnocchi and the vegan 'chicken'

step 7

simmer for 5 more minutes until the vegan 'chicken' is warm

serve with fresh herbs and crusty bread
