This vegan Zuppa Toscana is packed with flavorful Italian (vegan) sausages, smoky vegan bacon, and hearty kale. This vegan & vegetarian soup is a copycat version of Olive Garden's.
brown the vegan sausage with the chili flakes, then remove from the pot
repeat step 1 with the vegan bacon
add the onion & garlic to the pot and saute with the vegan butter
sprinkle on the flour and cook for a few minutes
add the potatoes and veggie broth and simmer for 30 mins.
add the plant milk, kale, and the browned vegan sausage & bacon. Simmer for 10 more minutes.
serve warm with crusty bread and a sprinkle of chili flakes on top!
