These Easy Vegan  Enchiladas are stuffed with sweet potatoes, black beans, and vegan ground ‘beef’.  They’re topped off with a spicy red enchilada sauce and a generous helping of vegan cheese.


- Corn Tortillas - Black Beans - Sweet Potatoes - Vegan "Beef" - Onion & Garlic - Enchilada Sauce - Taco Seasoning - Vegan Cheese

step 1

saute the filling ingredients

add 1/4 cup of filling to each tortilla. Roll up and place in a 9x13" baking dish.

step 3

cover with enchilada sauce and sprinkle with vegan cheese

bake at 425F for 20 minutes.
