Make the yeasted dough by combining the yeast, warm milk, and agave together. Then add the yeast mixture to the remaining bagel ingredients. Knead the dough for a few minutes.

After about an hour and a half, you get to punch the dough down and divide it into 12 equally sized balls. Form rings about 3-4 inches in diameter.

Boil the bagels for a few minutes, then brush the vegan egg wash on them and then cover them completely with cinnamon sugar.

Next, press the streusel on the top. Bake for 20 minutes until golden brown.

Transfer the bagels to a cooling rack. Cool for 20 minutes before cutting the bagels.
