These carrot cake muffins are moist, sweet, and packed with freshly grated carrot.
– All-purpose Flour – Grated Carrot – Dairy Free Milk – Applesauce – Spices

Whisk together all of the dry ingredients.
Add the wet ingredients in the center, then mix. Next, fold in the grated carrot.
Spoon 2 or 3 tablespoons of batter into each cup lined with paper liners.
Pop them in the oven, and bake them up at 375F for about 18-20 minutes.
Top muffins with a dairy-free cream cheese glaze.
