Combine the ingredients to make the cookie dough. Mix until a dough forms. Divide in 2 and roll into squares.

Bake the cookie squares on a parchment lined baking pan for 5 minutes.

Place one of the cookie squares on the bottom. Pour about 1 inch of the homemade ice cream on top of the cookie.

Evenly pour the remaining peach puree on top of the cream mixture.

Gently place the second cookie square on top. Cover with plastic wrap and place back in the freezer.
