8 Flavor-Packed Easy Tofu Marinades

These are the BEST easy tofu marinades I actually use on busy weeknights. Each one is quick, no-chop, and made with 5 ingredients or less (not including salt & pepper!). Flavor-packed, simple, and all vegan.

Ingredients

  • 16 oz super firm tofu
  • 1 recipe for one easy tofu marinade, listed below ⬇️

1. Herby Vegan Ranch Tofu

  • 1 cup vegan mayo or plain vegan yogurt
  • 2 tbsp apple cider vinegar
  • 2 tbsp dried dill or dried parsley
  • 1 tsp garlic powder
  • 1 tsp mustard powder
  • 1 tsp salt, use 1 ½ tsp if using yogurt
  • ½ tsp black pepper, to taste

2. Zesty Lemon Pepper Tofu

  • ½ cup fresh lemon juice
  • ½ cup extra virgin olive oil, or sub avocado oil if refrigerating overnight (see notes)
  • 1 tsp garlic powder
  • 2 tsp Dijon mustard
  • 2 tbsp dried basil or Italian herb blend
  • 1 tsp black pepper
  • 1 tsp salt

3. Vegan Honey Mustard Tofu

  • ½ cup agave nectar, vegan honey or maple syrup
  • ½ cup Dijon mustard
  • 1 tsp red pepper flakes, optional
  • 1 tsp salt

4. Lazy Sticky BBQ Tofu

  • 1 cup good quality BBQ sauce, like Stubb’s Sweet Heat or Sticky Sweet
  • 1 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • ½ tsp salt

5. Creamy Thai-Inspired Peanut Tofu

  • ½ cup creamy peanut butter, melted +2 tbsp hot water (as needed to thin)
  • ¼ cup soy sauce or tamari
  • ¼ cup rice vinegar or lime juice
  • 1 tbsp toasted sesame oil, optional but recommended
  • 2 tbsp Sambal oelek, sriracha or other chili garlic sauce
  • 2 tbsp pure maple syrup, or brown sugar

6. Savory Chipotle Tofu

  • ¼ cup fresh lime juice
  • ½ cup extra virgin olive oil, or sub avocado oil if refrigerating overnight (see notes)
  • ¼ cup adobo sauce, from canned chipotles
  • 1 tsp garlic powder
  • 2 tsp ground cumin
  • 1 ½ tsp salt

7. Spicy Maple Gochujang Tofu

  • ½ cup Gochujang sauce or paste
  • ¼ cup pure maple syrup
  • 2 tbsp soy sauce or tamari
  • 2 tbsp rice vinegar or lemon juice

8. Simple Harissa Tofu

  • 1 ½ tbsp harissa spice blend
  • ½ cup extra virgin olive oil, or sub avocado oil if refrigerating overnight (see notes)
  • 2 tbsp agave nectar, or vegan honey
  • 2 tbsp lime juice or lemon juice
  • 1 ½ tsp salt

Instructions

  • Use 1 (16 oz) block of super firm tofu. Cut into ¼–½ inch cubes or your preferred shape. Smaller pieces absorb flavor more quickly. See notes for other shapes.

  • In a shallow container or bowl with a lid, whisk together all marinade ingredients until well combined.

  • Add the tofu to the container and gently toss to coat. If using a container with a tight-fitting lid, seal and shake to mix.
  • Marinate at room temp. for at least 20–30 minutes, or up to overnight in the fridge for stronger flavor. Shake or stir once during marinating if storing longer than a few hours.
  • Cook as desired. Bake, pan-fry, or air fry until golden and crisp around the edges. See blog post for cooking method tips.
    Air Fryer: 400°F for 15–20 minutes, flip or shake halfway through.
    Oven: 425°F for 22–28 minutes, flip halfway.
    Skillet: Medium heat, cook with oil for 5–8 minutes per side until golden and crisp.

Recipe notes

Super firm tofu is recommended because it doesn’t need pressing and holds its shape well. If using extra-firm tofu, press it for 10–15 minutes to remove excess water before marinating.
Marinade time depends on how the tofu is cut:
    • Shredded or crumbled: 5–10 minutes
    • ¼-inch cubes: 15–20 minutes
    • ½-inch cubes: 30+ minutes, ideally overnight
    • Slabs or rectangles: 1 hour or overnight
    • Scored block: Overnight (best with thinner marinades like gochujang, harissa, chipotle, or BBQ)
Each marinade keeps in the fridge for up to 5–7 days. For easier storage, swap olive oil with avocado oil if you're refrigerating for more than a day. Olive oil can solidify when chilled.
