In a large bowl, cream the melted butter and sugar together.
Then, add the flaxseed, vanilla, lemon extract, lemon juice, and lemon zest. Whisk to combine.
Add the dry ingredients (flour, baking soda, salt) on top and sift them together with a fork. Use a spatula or wooden spoon to mix it in with the butter mixture.
Using a cookie scoop, scoop 12 balls of cookie dough (about 2 tbsp each) on the baking sheet. Sprinkle the tops with coarse sugar and extra lemon zest.
Then, bake at 350F (175C) for 9-10 minutes. You can also
