If you haven’t tried baked oats yet, well, let me introduce them to you. I like to think of baked oats as socially acceptable, healthier ‘cake’ that I can eat for breakfast. These vegan Nutella Baked Oats are super chocolatey and gooey in the middle, yet healthy enough to eat for breakfast or as a late-night snack!
why we love these nutella baked oats
Baked oats are incredibly easy to make. This recipe, like my Chocolate Baked Oats and my Apple Oat Breakfast Cake, is full of flavor and has a fluffy cake-like texture.
These oats take less than 5 minutes of prep time and only 22 minutes to bake, so they’re ready to eat in under 30 minutes. These Nutella baked oats have just the right amount of sweetness, a fluffy texture, and a gooey middle. I’m using a homemade vegan Nutella for this recipe, but you could use a storebought version instead. This is an upgraded version of your normal Nutella oatmeal, and I promise it will be a new favorite!
why this recipe works
No eggs are necessary for these Nutella baked oats! A lot of baked oat recipes call for egg, but it’s really not necessary! This recipe uses a ripe banana which serves as a fantastic egg replacer, plus it adds some healthy sweetness to the baked oats. If you’re not a fan of bananas, no worries! You can substitute in applesauce instead. Since eggs also help leaven baked goods, today we’re adding baking powder to help the baked oats rise and to give them a cake-like texture.
the nutella baked oats ingredients
This recipe packs as much chocolate flavor into the oats as possible by using cocoa powder, chocolate chips, and Nutella. These easy baked oats only use 8 ingredients making them super simple and quick to whip up.
You’ll need to gather the following ingredients to make these baked oats:
- Oats
- Banana
- Cocoa Powder
- Nutella, homemade vegan nutella or storebought
- Baking Powder
- Salt
- Dairy Free Milk
- Chocolate Chips
- Vanilla, optional
homemade vegan nutella
Normal Nutella is unfortunately not vegan friendly since it has dairy-based milk in it. But thankfully, it’s super easy to make at home. Nutella uses hazelnuts and cocoa powder to create a super creamy unique taste that everyone loves so much. Using hazelnut butter would make this the most authentic but you can also use almond butter as the base as I did! You only need 5 ingredients to make this homemade plant-based Nutella.
- Nut Butter, hazelnut or almond
- Cocoa Powder
- Maple Syrup
- Dairy Free Milk
- Salt
storebought vegan nutella
If you don’t have time to make your own homemade Nutella, there are a few vegan options available. Below are some of the best vegan Nutella options on the market!
- Nutiva Hazelnut Spread: this one is reasonably priced and labeled vegan
- Artisana Hazelnut Spread: it’s on the pricier side but has no palm oil & is sweetened with coconut sugar
- Pyure Organic Hazelnut Spread: this one is labeled both peanut free and vegan
- Justin’s Chocolate Hazelnut & Almond Butter: pricier and is a blend of hazelnut and almond but is available at most grocery stores
equipment and tools
These baked oats are super easy to make if you have a high-speed blender or a food processor. Because the oats need to be blended up into a fine texture, I don’t recommend making this recipe without one of these tools. Blending the oats helps create a fine, cakier texture.
how to make the nutella baked oats
The prep time for these Nutella oats is super fast. It takes about 5 minutes to mix together. The longest time in this recipe is just waiting for the oats to bake and then cool down a bit!
Below are the main steps for making these Nutella baked oats:
- Preheat the oven to 350F.
- In a blender or a food processor, add the rolled oats, banana, cocoa powder, dairy-free milk, salt, and Nutella.
- Blend until smooth. Add the baking powder and blend again.
- Pour into a greased ramekin. Scoop a spoonful of Nutella (as much as you’d like) into the center and cover it with the baked oats batter.
- Sprinkle chocolate chips on top.
- Bake for 22-25 minutes on the middle rack.
the nutella center
To make a gooey center, I like to scoop an extra spoonful of Nutella onto the oats prior to baking. Of course, this is optional and if you’d like to reduce the amount of sugar in the recipe you can omit this step. The more Nutella you put in the center of the oats, the gooier the center will be after baking.
chocolate chip topping
Similar to the Nutella in the center, chocolate chips on top are optional but recommended! After baking the chocolate chips get melty and add to the chocolate flavor of these baked oats.
Add as many chocolate chips as you’d like! If you’d like these baked oats to be more dessert-like, you can even mix them into the batter.
nutella baked oats tips & tricks
For this recipe, rolled old-fashioned oats are best.
Nutella is not vegan but there are many vegan versions available to buy. You can also make the homemade vegan version listed in the notes section of the recipe card below.
