what is Biscoff?
In case you didn’t know, Biscoff is kind of a hot topic. It’s a super tasty (somewhat addictive) cookie that has swept the world in the past couple of years. Lotus is the company that makes Biscoff cookies.
The first Biscoff cookie was actually made back in 1932 by a Belgian baker named Jan Boone Sr. The cookie had that distinctive caramelized flavor and was made with only natural ingredients.
Biscoff cookies pair great with coffee and espresso making it a popular option for cafes and coffee shops around the world.
is Biscoff vegan?
To all my vegans out there- you’re in luck! Original Biscoff Cookies are in fact vegan. They’re free from eggs, milk, and animal by-products (including those pesky ‘traces of’ ingredients).
I’m usually able to find Biscoff cookie butter and the cookies at my local grocery store and Target in the aisle with nut butter and jams. If you’re not able to find the Biscoff cookies in your grocery store, you can order them online. You can also order the Lotus Cookie Butter online, however, it is more expensive than buying it in-store (about twice as much!).
If you’re not able to find the Lotus brand of cookie butter in stores, Trader Joe’s also sells delicious cookie butter that is very similar in flavor.
Cookie butter is a great addition to baked goods. It’s a pretty thick spread, similar in texture to peanut butter. Most recipes that call for almond butter or peanut butter could be swapped out for speculoos spread.
However, cookie butter does have a high sugar content and has a tendency to make baked goods very caramelly flavored or sometimes crunchy if too much is used.
Cookie butter is super tasty incorporated into baked goods as you can see below! But if you want some more ideas, here are a few more ways that you can use speculoos spread:
