This crumble topping is inspired by the nostalgic Good Humor strawberry shortcake bars.

These cake bars have a strawberry inner, vanilla exterior and shortcake crumbles on the outside of the ice cream bar. In my opinion, the crumble coating was honestly the best part of the ice cream.

Ingredients

Today weโ€™re using 2 simple ingredients to make the BEST and easiest strawberry crunch crumbles.

 They are:

  • Golden Oreos, the regular kind- no need to get double stuffed
  • Freeze Dried Strawberries

Thatโ€™s it! Because weโ€™re using freeze-dried fruit, it means we can make this recipe even when itโ€™s not strawberry season.

Substitutions 

  • Nilla Wafers: you could sub in another vanilla-flavored cookie (like Nilla wafers) instead of the Golden Oreo cookies. Note: Nilla Wafers arenโ€™t accidentally vegan like Oreos, but you can make your own homemade version!
  • Vanilla Wafer Cookies: you could also use the vanilla creme filled wafer cookies instead of Oreos.
  • Freeze Dried Strawberries: if you donโ€™t have freeze dried strawberries, you could try making your own dehydrated strawberries, however the topping wonโ€™t be quite as crispy.

STEP 1: The first step is optional- remove the cream center from the Oreos. This helps create a finer shortcake crumble. If youโ€™d like a chunkier crunch coating, leave the cream in the cookies.

STEP 2: Add the freeze dried strawberries and pulse them until they have a coarse crumb.

๐Ÿ“Œ TIP: if you donโ€™t have a food processor, you can still make this recipe with a rolling pin! Place the ingredients in a plastic bag or between two sheets of parchment paper. Roll the pin over them to crush the ingredients.

STEP 3: Then place the Golden Oreos in the food processor. Pulse them briefly in the food processor to break them into a coarse crumble.

  • 10 Golden Oreos
  • โ…“ heaping cup freeze-dried strawberries

Instructions

  1. Optional: separate the Golden Oreo cookies from the cream center. This helps create a finer shortcake crumble. If you’d like a chunkier crunch coating, leave the cream in the cookies.
  2. Place the freeze-dried strawberries into the food processor. Pulse until they are a coarse texture. 
  3. Then, add in the Golden Oreos, and pulse until the mixture is a medium-fine texture but not a powder. There should be large chunks of Golden Oreos remaining. 
  4. Transfer to an airtight container and store in a cool, dry place.
