These strawberries and cream overnight oats are a creamy, simple twist on classic strawberry overnight oats — perfect for meal prep and made with just a handful of ingredients. They’re also completely vegan, dairy-free, and gluten-free!
On busy weekdays, I love having a quick breakfast ready to go, and these strawberry overnight oats are always in rotation. Honestly, they’re right up there with my peach crisp overnight oats recipe. I love that you don’t even need fresh berries to make them. Frozen strawberries work just as well (if not better!) and make this recipe something you can enjoy year-round.

Old-Fashioned Oats
These are the base of the recipe and what give the oats their thick, creamy texture after soaking overnight. When combined with dairy-free milk and chilled, the oats soften and all the starches thicken up, making them super satisfying and spoonable.
Quick oats can also be used but I don’t recommend using steel cut oats (use these in my steel cut oat cookies instead!).
Chia Seeds
Chia seeds help make the oats extra creamy with a pudding-like consistency. They absorb the liquid and add thickness, kind of like they do in my chia pudding recipe! If you’re out of chia seeds or prefer something different, ground flaxseed or hemp hearts are a great sub.
Dairy Free Milk
I like using soy milk because it adds some plant-based protein and helps keep me full all morning. But any plant milk works: coconut milk makes it extra rich, oat milk is super creamy, and almond milk keeps it lighter.
Strawberries
We can’t have strawberry overnight oats without the strawberries! I actually call for frozen berries here because they release more flavor when thawed or warmed up. That’s thanks to the water expanding in the berries when frozen, breaking down their structure.
Vegan Yogurt
This is what really brings out the strawberries and cream flavor. I love adding a dollop of vegan yogurt on top for extra creaminess and tang.

Let’s Make Strawberry Overnight Oats

In a large bowl, combine the dry ingredients. Whisk well!

Stir in the dairy-free milk, maple syrup and vanilla extract.

Cover and place in the fridge to thicken for about 2-3 hours. Thickening before assembling helps create defined layers in the jars.

Add the frozen strawberries to a microwave safe bowl and microwave on high until the mixture has reduced and thickened.

Spoon 2-3 tablespoons of the thickened oats into a glass jar. Layer on a spoonful of strawberries and top with more oats.

Add a spoonful of dairy free yogurt on top and repeat with the remaining oats. Place in the fridge to enjoy the next morning!
Serving & Storage
These strawberry overnight oats are best served cold, straight from the fridge. I like to give them a good stir and add an extra dollop of yogurt or a drizzle of nut butter on top before digging in.
If you want to make them feel extra special, sprinkle on some granola or hemp hearts for a little crunch. Such an easy breakfast on weekday mornings!
- Storage Tips: Store the oats in an airtight jar or container in the fridge for up to 5 days. The longer they sit, the thicker they’ll get. If they firm up too much, just stir in a splash of plant-based milk to loosen them up. The strawberry layer holds up well and actually gets better over time, as the berry flavor seeps into the oats the longer they sit.

- Frozen berries = stronger flavor: Using frozen strawberries actually helps release more flavor. When they thaw or are microwaved, they break down and become saucy, giving you that sweet, jammy layer that fresh berries alone don’t quite have. If you’re a strawberry lover, I definitely recommend using frozen berries.
- Mix dry ingredients first: Whisking together the oats, chia seeds, and protein powder before adding liquid helps prevent clumps.
- Want to make these strawberry overnight oats more filling? Stir in a scoop of your favorite vegan protein powder. If you do, you might need an extra splash of dairy-free milk to keep the texture from getting too thick.

Instructions
- In a large bowl, combine the oats, chia seeds and protein powder (if using). Whisk to combine.1 cup old fashioned oats, 2 tbsp chia seeds, 2 tbsp vegan vanilla protein powder
- Stir in the dairy-free milk, 1 tablespoon of maple syrup and vanilla extract. Cover and place in the fridge to thicken for about 2-3 hours.1 ½ cups dairy-free milk, 1-2 tbsp pure maple syrup, ¼ tsp pure vanilla extract
- Add the frozen strawberries to a microwave safe bowl and microwave on high for 2 minutes. After two minutes cut the berries into smaller, bite-sized pieces. Microwave for another 2-3 minutes, stopping every 30 seconds, until the mixture is bubbling and the liquid has reduced by about a quarter. Add 1 tablespoon of maple syrup if needed. Cover and place in the fridge until ready to assemble.1 ¼ cups frozen strawberries
- Spoon 2-3 tablespoons of the thickened oats into a jar. Layer on a spoonful of strawberries and top with more oats. Add a spoonful of dairy free yogurt on top. Repeat with the remaining oats.5 oz dairy-free yogurt
