Pop-Tarts and Toaster Strudels were a rare but exciting treat growing up. This homemade version brings that same excitement—flaky, warm, gooey in the middle, and way more satisfying. One bite kinda makes me feel like a kid again and what’s not to love about that.

Frozen Puff Pastry Sheets
This is the base of our delicious homemade toaster strudels! I used the Pepperidge Farm brand, which is accidentally vegan and easy to find in most grocery stores.
Each box comes with two sheets (enough to make 8 toaster strudels). If you’re gluten-free, Sweet Loren’s vegan & gluten-free puff pastry is a great alternative.
Filling
You can keep it classic with strawberry jam or get creative with cinnamon sugar, apple pie filling, or any jam you like.
Just make sure your filling isn’t too runny. It should be thick enough to stay put while baking. You can also use leftover compote, apple curd, or even homemade fruit preserves if you have them on hand.
Vegan Egg Wash
A simple 1:1 mix of maple syrup and almond milk gives you that golden brown, glossy finish and helps seal the edges. You can also use one of these vegan egg wash alternatives.
Powdered Sugar
You’ll use this for the icing drizzle. Don’t skip it because it takes the strudels to the next level! Just mix with a splash of plant milk and vanilla extract until smooth.

Step By Step Guide
How to Make Vegan Toaster Strudels

Cut a partially thawed sheet of puff pastry into 8 equal sized rectangles. Repeat with the second sheet of puff pastry. You should have 16 total rectangles.

Dollop 1 tablespoon of jam or pie filling onto 8 of the puff pastry slices. Brush vegan egg wash onto the edges.

If making the cinnamon roll flavor, repeat step 2. Spread the cinnamon roll filling evenly over the puff pastry, leaving a 1/4 inch border.

Cover the filling with the second rectangle of puff pastry.

Use a fork to crimp the edges. Be sure to make sure there’s a tight seal so the filling doesn’t leak out!

Place the strudels on the prepared baking sheet. Brush the tops of the strudels with more vegan egg wash and bake at 400F for about 20-22 minutes.

While they bake and cool, mix the icing ingredients together in a small bowl.

Drizzle the icing over the cooled vegan toaster strudels and enjoy.
Other Filling Ideas
Almost any thick jam, preserve, or spread will work here. Just keep it to about 1 tablespoon per strudel so it doesn’t overflow while baking. A few ideas to try:
- Strawberry, raspberry, or blueberry jam (store-bought or homemade)
- Apple pie or cherry pie filling (canned is totally fine)
- Vegan Nutella (store-bought or homemade)
- Peanut butter and jelly (grape jelly is a classic)
Storage
- Room Temp: Let the strudels cool completely, then store in an airtight container at room temperature for up to 3 days.
- Freezer: Freeze baked strudels in a single layer, then transfer to a freezer-safe bag or container. Reheat straight from frozen. No need to thaw.
- Oven or Toaster Oven: Bake at 350ºF for 5–10 minutes until heated through and crisp again.
- Air Fryer: Air fry at 325ºF for 4–6 minutes. Keep an eye on them so the pastry doesn’t over-brown.
- Standard Toaster: Skip the icing and you can pop these straight from the freezer into the toaster, just like the originals.

Tips from Emily’s Kitchen
- Let the puff pastry thaw just enough. About 30 minutes at room temp is usually perfect. It should still be cold, but soft enough to unfold and cut without cracking.
- Don’t overfill. Stick to about 1 tablespoon of filling per strudel. Too much and it’ll leak out the sides while baking.
- Seal them well. Press the edges together with a fork to keep the filling tucked in during baking.
- Use a vegan egg wash. A quick brush of maple syrup + non-dairy milk gives them that golden brown, glossy finish.

Instructions
- Thaw the puff pastry: Let the frozen sheets sit at room temperature for about 30 minutes, until cold but easy to unfold without cracking.1 package vegan frozen puff pastry
- Preheat oven to 400ºF and line a large baking sheet with parchment. Unfold each pastry sheet and cut into 8 equal rectangles—16 total.
- Make the filling (if using cinnamon roll): In a small bowl, mix together the filling ingredients until smooth.½ cup light brown sugar, ¼ cup softened vegan butter, 1 tbsp all-purpose flour, 2 tsp ground cinnamon
- Assemble the strudels: Add 1 tablespoon of filling to the center of half the rectangles. Mix the almond milk and maple syrup for the vegan egg wash, then brush around the edges of the filled pieces. - Brush and bake: Brush the tops with more vegan egg wash. Bake for 20–22 minutes, or until puffed and golden brown.

- Gluten-Free Option: Use Sweet Loren’s puff pastry or another vegan & gluten-free brand if needed. Just make sure to follow the thawing instructions on the package, as some GF doughs can be more delicate.
