Is there any summer dessert better than peach cobbler? I definitely don’t think so! This easy vegan peach cobbler is such a staple Southern comfort food that you’ll want to make on repeat. I’ve been all about the peach recipes lately. So far I’ve made Homemade Peach Nectar, Simple Glazed Peaches, and my Classic Peach Pie.

Like these other peach recipes, this homemade peach cobbler recipe is so delightful, you’ll have people guessing whether it’s actually vegan! Here are a few reasons we love this recipe and you will too.

This simple peach cobbler recipe is made with fresh in-season peaches. It uses about 7-8 medium-sized peaches, which when sliced is about 4-5 cups. Easy summer desserts are the best, especially when they use less than 10 ingredients like this one!

To make this dairy-free peach cobbler, you’ll want to gather the following ingredients:

  • Fresh Peaches: Because so much of the flavor of this recipe comes from the peaches, it’s important to use ripe, sweet fruit.
  • Vegan Butter: I love using Country Crock Plant Butter or Earth Balance Buttery Sticks here. You can use your favorite brand or read this article to learn which vegan butter brands are the best for baking. You can also use coconut oil, however vegan butter will give the cobbler more flavor.
  • Sugar: I used granulated white sugar, but you can use light brown sugar for extra richness or even coconut sugar.
  • Cornstarch: This helps thicken the peach filling when baked. Don’t skip this!
  • Flour: I used King Arthur’s All Purpose Flour to make the cobbler topping. 
  • Cinnamon: Ground cinnamon adds lots of flavor. You can also add a dash of nutmeg if you’d like.
  • Vanilla Extract: Use pure vanilla extract for the best flavor!
  • Plant Milk: I used almond milk but you can use other dairy free milk like oat milk or soy milk.

HELPFUL EQUIPMENT

Here are a few tools that will make creating this recipe extra easy:

  • Large Bowl: For the filling and the cobbler topping
  • Casserole Dish, Cast Iron Skillet, or Baking Dish: For baking
  • Large Pot: Optional, for blanching the peaches to peel them

Step by Step Instructions

Cobbler is essentially only two main components: the fruit filling and the topping. Cobbler is a bit different from a fruit crisp because the topping is usually made from a sweet biscuit or cake like topping. See below for how to make it:

STEP 1: Prep the peaches by blanching them to make them easier to peel. Drop them in simmering water for 30 seconds. 

STEP 2: Then, drop in ice water for 20-30 seconds. 

STEP 3: Peel the peaches and slice them.

STEP 4: Mix the peach slices with melted vegan butter, sugar, cornstarch, and cinnamon. This will make the thick syrup when baked! You can also add 1-2 teaspoons of lemon juice to help brighten the filling but this is optional.

STEP 5: Make the cobbler topping by combining the flour, baking powder, cinnamon, sugar, plant milk, vegan butter, sea salt and vanilla in a mixing bowl.

STEP 6: Spread the peach mixture onto the bottom of a baking dish. Then, spread the cobbler batter on top of the peaches. 

STEP 5: Bake at 375F for about 50-55 minutes, until the topping is golden brown and the peaches are bubbling!

Serving the Vegan Peach Cobbler

This homemade easy peach cobbler is best served warm the first or second day. Straight from the oven, the fresh peaches will be bubbly in their thick sticky syrup and the biscuit topping will be warm and crispy.

I love serving this vegan cobbler with dairy free whipped cream or with a big scoop of vanilla ice cream on top. Honestly, the perfect summer dessert. 

Storage Tips

You can store leftover cobbler in an airtight container or cover the baking dish with plastic wrap. Then, keep in the fridge for 2-3 days. Reheat in the microwave for 30 seconds when ready to serve.

Helpful Tips for the Best Vegan Peach Cobbler

Peel the peaches: For the best texture, I highly recommend peeling the peaches before adding them to the filling.

Use ripe, sweet peaches: SO much of this cobbler’s flavor comes from the peaches. This is why using ripe, sweet peaches is so important.

Bake until a toothpick is removed cleanly: Make sure the cobbler topping is baked through before removing from the oven.

FAQ

Can I use canned or frozen peaches instead of fresh peaches?

While I have only tried making this particular recipe with fresh peaches, canned or frozen peaches will most likely work as well.

If using canned peaches, drain all the syrup or liquid from the can and only use the peaches. Canned peaches may result in a slightly softer filling once baked.
If using frozen peaches, let them thaw completely before mixing with the filling ingredients. Frozen peaches tend to be less sweet than fresh peaches, so additional sugar may need to be mixed into the filling.

Will the filling of the cobbler be runny?

When first out of the oven, the cobbler filling will be more liquidy since it hasn’t completely set up. After cooling for 30 minutes, the filling should be a syrupy consistency, not liquidy.
If you’d like the filling to set up further, place the cobbler into the fridge to completely cool down.

How do I know if the cobbler is done baking?

The cobbler topping will be golden brown and hard to the touch when finished baking. To be sure it’s baked all the way through, insert a toothpick into the center of the baking dish. It should remove cleanly without any wet batter (although if you insert it too far the peach filling will get on it).

Ingredients

Filling

  • 7-8 fresh peaches, peeled & sliced thin (about 4 cups)
  • 2 tbsp salted vegan butter, melted- 28g
  • ¼ cup granulated sugar or light brown sugar, 50g
  • 1 tsp ground cinnamon, 2.5g
  • 1 tbsp cornstarch, 8g
  • 1 tsp vanilla extract

Topping

  • 1 ½ cups all-purpose flour, 180g
  • ½ cup granulated sugar or light brown sugar, 100g
  • 2 tsp baking powder, 9g
  • 1 tsp cinnamon, 2.5g
  • ¼ tsp salt
  • 6 tbsp salted vegan butter, melted- 84g
  • 2 tsp vanilla extract
  • ½ cup dairy free milk, like almond milk
  • 1 tbsp light brown sugar, for sprinkling on top

Instructions

To Peel & Prep the Peaches:

  • Bring a large pot of water to a boil. Pierce the skin of each peach with a knife. Simmer the peaches for 30 seconds – 1 minute and remove from the water. Drop the peaches in ice water for 20-30 seconds, then remove the skin. It should slide right off.

  • Slice the peaches thinly and remove the pit. Add the peaches to a medium size bowl.
  • Add the 2 tbsp of melted vegan butter, sugar, cinnamon, cornstarch and vanilla on top. Mix until the peaches are evenly coated.
    2 tbsp salted vegan butter, ¼ cup granulated sugar or light brown sugar, 1 tsp ground cinnamon, 1 tbsp cornstarch, 1 tsp vanilla extract
  • Set them aside, covered in the fridge, while preparing the topping.

To Make the Topping:

  • Preheat the oven to 375°F.
  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon and salt.
    1 ½ cups all-purpose flour, ½ cup granulated sugar or light brown sugar, 2 tsp baking powder, 1 tsp cinnamon, ¼ tsp salt
  • Make a well in the center and pour in the melted vegan butter, vanilla, and dairy free milk.
    6 tbsp salted vegan butter, 2 tsp vanilla extract, ½ cup dairy free milk
  • Mix until the wet and dry are just incorporated.
  • In a greased 8×8” baking pan, spread the prepared peaches onto the bottom. Spoon the cobbler batter on top of the peaches. Use the back of the spoon to spread it evenly over the peaches. Sprinkle light brown sugar on top.

  • Optional: Set the baking dish onto a cookie sheet in case the peaches bubble over.
  • Bake at 375°F for 50-55 minutes. The topping should be golden brown and the peach filling should be bubbling. To make sure the topping is cooked through, insert a toothpick into the center of the baking dish. It should remove cleanly without any wet batter.
  • Serve warm with a scoop of dairy free vanilla ice cream.

    Made this for my Dad (his favorite) for Father’s Day today and it was amazing!! Used cane sugar and I buttered the dish and sprinkled some sugar before adding peaches, so yummy!! 😋
